Scrambled Egg Omelet



This one is fairly simple and straight-forward. I like omelets, I like scrambled eggs, so I combined the two. All you need are some vegetables: onions, tomatoes, green peppers, mushrooms - and/or whatever else you want in it, add your egg(s), mix it all up, put it on the pan and cook it like you would scrambled eggs. That easy.

You can also switch it up. Try a south-west version with corn, tomatoes, green peppers, and chili powder. You can add cheese as well, but I like mine as healthy as I can get it.
