Scrambled Egg Omelet



This one is fairly simple and straight-forward. I like omelets, I like scrambled eggs, so I combined the two. All you need are some vegetables: onions, tomatoes, green peppers, mushrooms - and/or whatever else you want in it, add your egg(s), mix it all up, put it on the pan and cook it like you would scrambled eggs. That easy.

You can also switch it up. Try a south-west version with corn, tomatoes, green peppers, and chili powder. You can add cheese as well, but I like mine as healthy as I can get it.

Sweet Potato Crisps

I am attempting this post using the blogger iPod application. We'll see how it goes.

For this recipe you'll need:
Sweet potatoes
Olive oil
And your choice of spices if you want to use any.

I cut my potatoes into circles, but you can cut them however you want. Arrange them on a foil covered cookie sheet and add your seasonings. Drizzle some olive oil over the top and throw them in the oven at 425• for 15-30 mins depending on thickness.

I added garlic powder and red pepper to mine. The sweetness of the potato was offset by the pepper and tastes delicious!

Whipped Cauliflower


Ingredients:
1 head cauliflower cut into pieces
Olive Oil
Milk
Salt and Pepper

Steam the cauliflower for 7-10 minutes. Add steamed cauliflower, a little olive oil, milk to texture, and salt and pepper to taste - into a food processor or blender until it's light and fluffy.

Veggie Roll-Ups

When I cook, I usually cook by what I think/know tastes good together and therefore rarely have a recipe. I will do my best with this one..


You will need:
2 packages of cream cheese
2 crescent roll canister things - you know, the ones Pillsbury have?
Broccoli
Onions
Garlic
Carrots
Mushrooms

Chop up the veggies very fine. Add some olive oil to the pan and warm it up a bit before adding the vegetables. Saute them for a while, adding your favorite seasonings (salt, pepper, onion powder, etc.). You should cook them until they're soft but not soggy. Turn down the heat, add the 2 packages of cream cheese and melt it all together. When that part's done, open the crescent rolls and flatten them out, add a good amount of the veggie-cream mix and roll 'em up. Bake them as directed on the crescent roll package.

Fast, easy, and delicious. :)

Smoothies

Okay so, apparently everyone forgot about this ingenious idea that I didn't have, but I'll do my best to revive it.

Lately I've been very interested in raw diets and have been making a lot of smoothies. For the liquid (if I need any) I use either plain water or a bit of a Naked juice drink. The only thing I use to thicken it is a banana and then I add whatever else sounds good - strawberries, blueberries, blackberries.. you get the point. Then I blend it all up. Sometimes I add some raw granola (I was told there probably isn't such a thing as granola is baked? I have no idea..) and eat it with a spoon. Yummy.




Another thing I love about raw diets is the ease of it. I don't have to cook anything. Blending is probably the most involved process of it. I've found raw crackers in the store, even, and once again, those Naked juice drinks are a meal in themselves.

I do not recommend the raw diet for everyone, though, and I do not eat completely raw all day unless my body is doing okay with it. I'll normally eat one "regular" meal just in extremely small portions. Yes, I've lost weight, but you would not believe how good I feel. I do have meat once in a while, but think I'll be able to eventually ease off of that as well. I don't miss candy/sugary snacks as much as I thought I would. Even with Easter coming up I can fill the eggs without popping a few jelly beans or chocolate beans in my mouth with no effort or thought.

Anyway, this was supposed to be a blog about how I make my smoothies.. not about raw diets. Either way, it's about food so.. it works.
